Peanut Curry Ramen Bowl

Ingredients

  • 1 tablespoon oil
  • 4 cups vegetable broth
  • 3/4 cup peanut butter
  • 3 tablespoons red curry paste
  • 1 tablespoon minced ginger
  • 1/4 cup brown sugar
  • 1 can coconut milk
  • Salt to taste
  • Assorted vegetables (to taste)
  • 2-3 packs ramen noodles
  • Chili powder (optional, for topping)
  • Crushed peanuts (optional, for topping)
  • Fresh cilantro (optional, for topping)
  • Jalapeños (optional, for topping)

Preparation

  1. Add 1 tablespoon oil to a pot on medium heat and lightly fry the red curry paste and ginger for 3-4 minutes.

  2. Add the vegetable broth and bring it to a boil, stirring continuously until the paste dissolves.

  3. Add the peanut butter, sugar, and salt. Dissolve well and then slowly add in the coconut milk.

  4. Turn the heat down to a low simmer, add in your choice of vegetables and ramen noodles. Typically, use two packs for a curry-like feel or three for less soupy consistency.

  5. Let the noodles cook according to the package instructions. Serve and add preferred toppings such as chili powder, crushed peanuts, cilantro, and jalapeños.
