Plant Based Banana Bread
Ingredients
Wet
- 4 bananas, mashed
- 200 g plain soy yoghurt
- 1 tbsp apple vinegar
- 1 tsp vanilla essence
Dry
- 190 g wholemeal flour
- 80 g plain flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- pinch of salt
Preparation
Note: This is more like actual bread than cake with no sugar added, so keep that in mind.
Preheat the oven to 190 °C.
Prepare 900g/2lb bread baking tin.
Mix all the wet ingredients in a bowl.
Add all the dry ingredients and mix well together, so there's no lumps.
Pour the batter into the tin, level the top.
Bake for 50 mins, until the skewer stuck inside the bread comes out clean.
Take out of the oven and leave in the tin for about 10-15 mins.
After that, take out and let cool completely on a wire rack.
Enjoy it toasted with a thin layer of hazelnut spread or jam.
