Quick Vegan Tacos for Taco Tuesday
Ingredients
- Sliced mushrooms
- 1 bag of Cruciferous Crunch from Trader Joe's
- Fresh lime juice
- Cumin
- Cayenne pepper
- Pink salt
- Black pepper
- Garlic powder
- Primal Kitchen Avo oil
- Food for Life Sprouted Corn Tortillas
- Avocado slices or salsa
Preparation
Heat a small amount of avocado oil in a pan and add cruciferous crunch, mushrooms, and seasonings.
Cook until the mixture softens and slightly browns, then add lime juice and cook for about 8 minutes or less.
Set the mixture aside and clean out the pan.
Add a generous amount of oil over medium heat.
Using two forks, hold the tortilla in place to make crunchy taco shells, flipping it a few times until it hardens but does not brown too much.
Once stiff enough to hold shape, place a rolled paper towel inside to maintain the shape and place shells on paper towel to drain the oil.
Stuff the tacos with the mixture, top with salsa, guacamole, or whatever you prefer, and enjoy.
