Roasted Tomato and Harissa Spaghetti

Ingredients

  • 500g cherry tomatoes
  • 1 can chickpeas
  • 4 cloves garlic
  • 1 red chilli
  • 150g sun-dried tomatoes
  • 2 tbsp harissa
  • 3 tbsp extra virgin olive oil
  • 250g spaghetti
  • 25g nutritional yeast
  • Salt and pepper to taste
  • Fresh basil leaves

Preparation

  1. Fry cherry tomatoes in hot oil until blistered. Add pepper, garlic, chilli, sun-dried tomatoes and harissa. Cook until soft and fragrant.

  2. Cook your pasta and save 300ml of pasta water before draining.

  3. Stir in nutritional yeast and pasta water to make a silky sauce. Add spaghetti and toss to coat.

  4. Serve topped with fresh basil and more nutritional yeast if you like.

Notes

  1. This recipe serves 2 and is ready in under 30 minutes. It uses cupboard staples and is healthy, packed with plants, and low-effort.
