Sausage jambalaya

Ingredients

  • 1 and 1/4 cup rice
  • 1 pack vegan sausages, chopped (i used shroomdogs)
  • 1 onion, chopped
  • 2 different coloured peppers, chopped (mine were quite small)
  • 2 garlic cloves, chopped
  • 1 and 1/2 cups of veg stock
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • black pepper
  • 3/4 cup tomato passata
  • 1 tbsp mixed herbs

Preparation

  1. In a separate pan, fry the sausage and then pop the cooked sausage in a separate bowl

  2. Pop the pepper and onion into the pan and fry for five minutes

  3. Tip into the bowl with sausage in

  4. Add all the remaining ingredients to the pan and leave to simmer for a few minutes

  5. Once the rice is cooked, drain and tip back into the pan

  6. Add all the components of the email into this pan and on a low heat stir until combined

  7. Once all the stock is absorbed, serve!!
