Scrambled Eggs with Asparagus + Blistered Tomatoes

Ingredients

  • •2 eggs
  • •4(ish) stalks of asparagus, washed and chopped
  • •1/3 cup or more of cherry/grape tomatoes, whole + washed
  • •Olive oil, salt + pepper
  • •Place 2 small pans on the stovetop over medium heat, drizzle a little olive oil in both

Preparation

  1. Once warm, place whole tomatoes in one, and chopped asparagus in the other. Sprinkle a little salt and pepper to taste. While those cook, beat eggs in a bowl, add a dash of water to the mix to make eggs fluffier. Continue to toss tomatoes as they begin to blister

  2. Once asparagus has started to soften, lower heat and add egg mixture to that pan. Cook scrambled eggs until you reach desired texture, remove both pans from heat. Plate + enjoy
