Simple Budget-Friendly Lentil Dahl Dinner
Ingredients
- half an onion
- two cloves of garlic
- 1 teaspoon ginger
- 1 cup red lentils
- 1 can coconut milk
- 1.5 cups water
- turmeric
- cumin
- curry powder
- pinch of chilli
- salt and pepper
Preparation
Chop half an onion, two cloves of garlic, and 1 teaspoon of ginger.
Cook the chopped ingredients in a pan for about 5 minutes.
Add 1 cup of red lentils, 1 can of coconut milk, and 1.5 cups of water, then stir well.
Add turmeric, cumin, curry powder, a pinch of chilli, salt, and pepper.
Cook on medium heat, stirring often, until the lentils absorb the water and reach the preferred consistency.
Serve with rice, spinach, and cherry tomatoes.
