Simple Budget-Friendly Lentil Dahl Dinner

Ingredients

  • half an onion
  • two cloves of garlic
  • 1 teaspoon ginger
  • 1 cup red lentils
  • 1 can coconut milk
  • 1.5 cups water
  • turmeric
  • cumin
  • curry powder
  • pinch of chilli
  • salt and pepper

Preparation

  1. Chop half an onion, two cloves of garlic, and 1 teaspoon of ginger.

  2. Cook the chopped ingredients in a pan for about 5 minutes.

  3. Add 1 cup of red lentils, 1 can of coconut milk, and 1.5 cups of water, then stir well.

  4. Add turmeric, cumin, curry powder, a pinch of chilli, salt, and pepper.

  5. Cook on medium heat, stirring often, until the lentils absorb the water and reach the preferred consistency.

  6. Serve with rice, spinach, and cherry tomatoes.
