Simple Loaded Vegan Chili

Ingredients

  • 1 medium onion
  • 1 medium green pepper
  • 4 cloves garlic
  • 3 cups vegetable broth
  • 15 ounce can tomato sauce
  • 15 ounce can diced tomatoes
  • 15 ounce can kidney beans
  • 15 ounce can great northern beans
  • 15 ounce can black beans
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/8 teaspoon cayenne pepper
  • 1 cup frozen corn

Preparation

  1. Heat oil in a large pot over medium heat

  2. Sauté onion, green pepper, and garlic until softened

  3. Add black pepper, chili powder, oregano, and cayenne pepper; cook for 1 minute

  4. Stir in vegetable broth, tomato sauce, diced tomatoes, kidney beans, great northern beans, and black beans

  5. Bring to a boil, then reduce heat and simmer for 20-30 minutes

  6. Add frozen corn and cook for another 5 minutes

  7. Optionally, exclude cayenne pepper and replace with paprika for less heat

  8. Season to taste and serve
