Simple Loaded Vegan Chili
Ingredients
- 1 medium onion
- 1 medium green pepper
- 4 cloves garlic
- 3 cups vegetable broth
- 15 ounce can tomato sauce
- 15 ounce can diced tomatoes
- 15 ounce can kidney beans
- 15 ounce can great northern beans
- 15 ounce can black beans
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon oregano
- 1/8 teaspoon cayenne pepper
- 1 cup frozen corn
Preparation
Heat oil in a large pot over medium heat
Sauté onion, green pepper, and garlic until softened
Add black pepper, chili powder, oregano, and cayenne pepper; cook for 1 minute
Stir in vegetable broth, tomato sauce, diced tomatoes, kidney beans, great northern beans, and black beans
Bring to a boil, then reduce heat and simmer for 20-30 minutes
Add frozen corn and cook for another 5 minutes
Optionally, exclude cayenne pepper and replace with paprika for less heat
Season to taste and serve
