Single Serving Banana Bread in Christmas Tree Ramekin


  • 1 banana, mashed
  • 1 egg, whisked
  • 2 tbsp coconut flour
  • 1/4 tsp baking powder
  • 1/2 tbsp cinnamon
  • 2 tbsp unsweetened almond milk
  • 1 tbsp organic almond butter
  • 1/2 scoop collagen (optional)
  • Coconut sugar (for sprinkling)


  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mash the banana until smooth.

  3. Add the whisked egg, coconut flour, baking powder, and cinnamon to the mashed banana. Mix well to combine.

  4. Pour in the unsweetened almond milk and organic almond butter. Stir until the batter is smooth.

  5. If desired, add the optional collagen and mix until fully incorporated.

  6. Grease a Christmas Tree-shaped ramekin or any small oven-safe dish.

  7. Pour the batter into the ramekin, filling it about 2/3 full.

  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  9. Once baked, remove from the oven and let cool slightly.

  10. Sprinkle the top with a little coconut sugar for added sweetness.
