Spiced Red Lentil Soup with Coconut Milk
Ingredients
- 1/2 diced white onion
- olive oil
- 2-3 minced garlic cloves
- 1 tablespoon curry powder
- 1 teaspoon cumin
- salt
- pepper
- 1/2 teaspoon cayenne (optional)
- 2 cups vegetable broth
- 1 can full fat coconut milk
- 1/2 cup tomato sauce or diced tomatoes
- 1/2 cup dry red lentils
- 2 cups spinach
Preparation
Sauté 1/2 diced white onion in olive oil for 5 minutes.
Add 2-3 minced garlic cloves and spices (1 tablespoon curry powder, 1 teaspoon cumin, salt, pepper, and 1/2 teaspoon cayenne optional); stir and cook for 1 minute.
Add 2 cups vegetable broth, 1 can full fat coconut milk, 1/2 cup tomato sauce or diced tomatoes, and 1/2 cup dry red lentils.
Bring to a boil and simmer for 20 minutes.
Stir in 2 cups spinach and remove from heat.
Tips
Serves 2-3 people.
Best paired with grilled cheese or a piece of toast.
To double the recipe, double all ingredients except coconut milk and use just one can.
