Spiced Red Lentil Soup with Coconut Milk

Ingredients

  • 1/2 diced white onion
  • olive oil
  • 2-3 minced garlic cloves
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • salt
  • pepper
  • 1/2 teaspoon cayenne (optional)
  • 2 cups vegetable broth
  • 1 can full fat coconut milk
  • 1/2 cup tomato sauce or diced tomatoes
  • 1/2 cup dry red lentils
  • 2 cups spinach

Preparation

  1. Sauté 1/2 diced white onion in olive oil for 5 minutes.

  2. Add 2-3 minced garlic cloves and spices (1 tablespoon curry powder, 1 teaspoon cumin, salt, pepper, and 1/2 teaspoon cayenne optional); stir and cook for 1 minute.

  3. Add 2 cups vegetable broth, 1 can full fat coconut milk, 1/2 cup tomato sauce or diced tomatoes, and 1/2 cup dry red lentils.

  4. Bring to a boil and simmer for 20 minutes.

  5. Stir in 2 cups spinach and remove from heat.

Tips

  1. Serves 2-3 people.

  2. Best paired with grilled cheese or a piece of toast.

  3. To double the recipe, double all ingredients except coconut milk and use just one can.
