Summer Blueberry Pie Nice Cream
Ingredients
Nice cream
- 2-3 frozen bananas
- mix of fresh and frozen blueberries
- 1 passionfruit
Pie filling
- 1 cup blueberries
- 2 tbsp water
- 1 tbsp sugar
- 1 tsp cornstarch
- 1/8 tsp cinnamon
- 1/4 tsp vanilla
Toppings
- toasted coconut chips
- strawberries
- raspberries
- mango
- cherries
- blackberries
Preparation
Blend the frozen bananas, blueberries, and passionfruit until smooth.
For the pie filling, place blueberries, water, sugar, cornstarch, cinnamon, and vanilla in a saucepan, bring to a simmer, and cook for 5-10 minutes, then let it cool slightly.
Serve the nice cream with the pie filling and optional toppings.
Note: Use warm pie filling to melt the nice cream or let it cool to prevent melting.
