Super Easy Banana Fritters for Breakfast
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup buckwheat flour
Optional extras
- 1/2 tsp ground cinnamon
- 1/4 cup fresh blueberries
Preparation
Mix together the mashed bananas, flour and cinnamon in a bowl, then stir through the blueberries.
Drizzle some oil in a non-stick frying pan on a medium heat and gently drop a tablespoon of batter per fritter. I tend to do batches of 4 at a time.
Cook the fritters for 1-2 minutes per side, until golden brown.
Allow to cool on a wire rack then serve with a big dollop of natural yogurt.
Tips
You can add in a little ground cinnamon or fold in some fresh blueberries for extra yum!
