This Festive Fettuccine Alfredo Was Un-Beet-Lievable
Ingredients
- 1 3/4 cup of almond milk
- 3/4 cup of soaked cashews
- 1/4 cup of nutritional yeast
- 1 clove of garlic
- 1 thumb size piece of yellow onion
- 1 thumb size piece of beet root
- 2 tsp of lemon juice
- 1 tsp of pink salt
- a few dashes of black pepper
- 3/4 cup of @followyourheart parmesan
- 16oz of fettuccine pasta
Preparation
Combine all ingredients excluding parmesan and pasta into a blender
Blend until smooth
In a small pot on medium heat pour in sauce and add parmesan
Lower heat and stir until cheese has melted
Bring a large pot of water to a boil and add pasta
Cook until fork tender
Drain and pour in sauce
Garnish with chopped mint
Serve and enjoy!
