Vegan Festive Fettuccine Alfredo

Ingredients

  • 1 3/4 cup almond milk
  • 3/4 cup soaked cashews
  • 1/4 cup nutritional yeast
  • 1 clove garlic
  • 1 thumb size piece yellow onion
  • 1 thumb size piece beet root
  • 2 tsp lemon juice
  • 1 tsp pink salt
  • A few dashes black pepper
  • 3/4 cup followyourheart parmesan
  • 16oz fettuccine pasta

Preparation

  1. Combine all ingredients excluding parmesan and pasta into a blender and blend until smooth.

  2. In a small pot on medium heat pour in sauce and add parmesan. Lower heat and stir until cheese has melted.

  3. Bring a large pot of water to a boil and add pasta. Cook until fork tender. Drain and pour in sauce. Garnish with chopped mint. Serve and enjoy!
