This Festive Fettuccine Alfredo Was Un-Beet-Lievable

Ingredients

  • 1 3/4 cup of almond milk
  • 3/4 cup of soaked cashews
  • 1/4 cup of nutritional yeast
  • 1 clove of garlic
  • 1 thumb size piece of yellow onion
  • 1 thumb size piece of beet root
  • 2 tsp of lemon juice
  • 1 tsp of pink salt
  • a few dashes of black pepper
  • 3/4 cup of @followyourheart parmesan
  • 16oz of fettuccine pasta

Preparation

  1. Combine all ingredients excluding parmesan and pasta into a blender

  2. Blend until smooth

  3. In a small pot on medium heat pour in sauce and add parmesan

  4. Lower heat and stir until cheese has melted

  5. Bring a large pot of water to a boil and add pasta

  6. Cook until fork tender

  7. Drain and pour in sauce

  8. Garnish with chopped mint

  9. Serve and enjoy!
