Ultimate Vegan Nachos with Fresh Toppings
Ingredients
- 3 tortillas cut into eighths
- Olive oil
- Pink himalayan salt
- 3/4 cup of a vegan meat substitute(we use a mixture of lentils, mushrooms, and kalamata olives)
- 1/3 cup vegan queso
- 1/2 cup of sliced spinach
- 1/2 cup of chopped tomatoes
- 1/4 cup of chopped red onion
- 1/4 cup of chopped jalapeño peppers
- 1/4 cup of chopped kalamata olives
- 4 tbs of vegan sour cream
- A handful of sliced green onions
Preparation
Preheat oven to 350°, grab a baking sheet and drizzle olive oil on surface.
Place tortilla slices onto sheet and sprinkle with salt, place in oven for 5 minutes.
Once time's up remove sheet, flip tortilla slices and add one last dash of salt.
Place sheet back in the oven for another 5 minutes, remove and transfer tortilla chips onto a large plate.
Top with meat sub followed by queso, spinach, tomatoes, onion, peppers, olives, and sour cream.
Garnish with green onions, fresh squeezed lime juice, and enjoy.
