Ultimate Vegan Nachos with Fresh Toppings

Ingredients

  • 3 tortillas cut into eighths
  • Olive oil
  • Pink himalayan salt
  • 3/4 cup of a vegan meat substitute(we use a mixture of lentils, mushrooms, and kalamata olives)
  • 1/3 cup vegan queso
  • 1/2 cup of sliced spinach
  • 1/2 cup of chopped tomatoes
  • 1/4 cup of chopped red onion
  • 1/4 cup of chopped jalapeño peppers
  • 1/4 cup of chopped kalamata olives
  • 4 tbs of vegan sour cream
  • A handful of sliced green onions

Preparation

  1. Preheat oven to 350°, grab a baking sheet and drizzle olive oil on surface.

  2. Place tortilla slices onto sheet and sprinkle with salt, place in oven for 5 minutes.

  3. Once time's up remove sheet, flip tortilla slices and add one last dash of salt.

  4. Place sheet back in the oven for another 5 minutes, remove and transfer tortilla chips onto a large plate.

  5. Top with meat sub followed by queso, spinach, tomatoes, onion, peppers, olives, and sour cream.

  6. Garnish with green onions, fresh squeezed lime juice, and enjoy.
