Vegan Chocolate Orange Cookies
Ingredients
- 75 g/2 1/2 oz/1/3 cup vegan butter, softened
- 75 g/2 3/4 oz/1/3 cup castor (Superfine) sugar
- 1 vegan egg
- 1 tbsp vegan milk
- 225 g/8 oz/2 cups plain (all-purpose) flour (gluten-free option)
- 25 g/1 oz/ 1/4 cup cocoa powder
Icing
- 175 g/6 oz/1 cup icing (Confectioner’s) sugar, sifted
- 3 tbsp orange juice
- A little dark vegan chocolate, melted
Preparation
Line two baking trays with baking parchment.
Beat together sugar and butter until light and fluffy. Beat in the egg and milk until well combined. Sift together the flour and cocoa powder and gradually mix to form a dough. Use your fingers to incorporate the last of the flour and bring the dough together.
Roll out the dough on a lightly floured surface until 6 mm thick. Using a 5 cm fluted round cutter, cut out as many cookies as possible. Re-roll the dough trimmings and cut out more.
Place the cookies on the prepared baking tray and bake in a preheated oven at 180°C/350°F/Gas mark 4 for 10-12 minutes or until golden.
Leave the cookies to cool on the tray for a few minutes, then transfer to a wire rack to cool completely.
To make the icing, place the icing sugar in a bowl and stir in enough orange juice to form a thin icing. Spread the icing over the cookies and leave to set. Drizzle melted chocolate over them and allow to set before serving.
