Vegan Salmon and Cream Cheese Bagel
Ingredients
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp capers
- 1 tbsp brine from capers
- 1 tsp liquid smoke
- 1/2 sheet nori pieces
- Handful chopped dill
- Generous pinch of salt
- 4 medium carrots
Preparation
In a bowl, add lemon juice, olive oil, capers with brine, liquid smoke, nori pieces, dill, salt and pepper and stir to combine.
Finely slice the carrot and boil for 5 minutes until tender.
Add the carrots to the dressing and leave to marinade for 1 hour.
Assemble your bagel with vegan cream cheese, the carrots and rocket.
