Vegan Spinach Pesto with Nutritional Yeast
Ingredients
- 1 cup toasted pine nuts
- 1/4 cup olive oil
- 2 garlic cloves
- 2 tbsp lemon juice
- 1/4 cup nutritional yeast
- 1 packed cup basil
- 2 cups packed baby spinach
- salt and pepper to taste
- 1/4 cup water
Preparation
Put all ingredients in a food processor and blitz together. If you want a coarse texture, pulse; for a smoother texture, blitz continuously.
Check for texture and seasoning. Add more water if you want it a little looser.
Top with toasted pine nuts for extra crunch.
Serve with avocado drizzled with lemon juice and olive oil.
