Vegan Spinach Pesto with Nutritional Yeast

Ingredients

  • 1 cup toasted pine nuts
  • 1/4 cup olive oil
  • 2 garlic cloves
  • 2 tbsp lemon juice
  • 1/4 cup nutritional yeast
  • 1 packed cup basil
  • 2 cups packed baby spinach
  • salt and pepper to taste
  • 1/4 cup water

Preparation

  1. Put all ingredients in a food processor and blitz together. If you want a coarse texture, pulse; for a smoother texture, blitz continuously.

  2. Check for texture and seasoning. Add more water if you want it a little looser.

  3. Top with toasted pine nuts for extra crunch.

  4. Serve with avocado drizzled with lemon juice and olive oil.
