Warm Edamame Nourish Bowl with Garlic Chili Mayo

Ingredients

  • 1 cup broccoli
  • 1 tbsp tamari
  • 1/2 tsp garlic chili sauce or sriracha
  • 1/2 cup short grain brown rice
  • 1 cup thawed edamame
  • 1/4 chopped cucumber
  • 1 carrot, shredded or peeled into ribbons
  • 1 cup chopped romaine lettuce
  • Drizzle vegan sweet garlic chili mayo sauce (recipe below)

Sweet Garlic Chili Mayo

  • 2 tbsp vegan mayo
  • 1 tsp garlic chili sauce
  • 1 tbsp apple cider vinegar
  • 2 tsp agave or maple syrup
  • 1 tsp mustard
  • 1 tsp sweet relish
  • Water to thin as desired (optional)

Preparation

  1. Place broccoli florets in a pan with 1/4 cup water, cover, and steam for about 4-5 minutes or until bright green.

  2. Remove the lid and toss the broccoli with tamari and garlic chili sauce. Cook until the liquid is absorbed.

  3. In a small bowl, combine all sweet garlic chili mayo ingredients and stir well. Add water in small amounts to achieve desired consistency.

  4. To assemble the bowl, add rice and romaine lettuce, followed by the other raw veggies.

  5. Top with cooked broccoli and thawed edamame.

  6. Drizzle the sweet garlic chili mayo sauce over the top.
