Crispy Cauliflower Gnocchi in Creamy Sun-Dried Tomato Sauce
Ingredients
- 1 package store bought gnocchi (pictured: Trader Joe’s cauliflower gnocchi)
- 1 tbsp oil
- Method
- Add 1 tbsp oil to a pan over medium heat. Add the frozen gnocchi and constantly toss with a wooden spoon or spatula , cooking for 5-7 minutes until crisp on both sides
- Sauce
- 1/2 cup sun dried tomatoes in oil
- 1/2 yellow onion
- 3 cloves garlic
- 1 tsp avocado oil
- 1/2 cup raw cashews (or 1/2 cup white beans for a bit free option)
- 2 cups water
- 3 tbsp nutritional yeast
- Salt
- Pepper
Preparation
Saute onions and garlic in oil, for 4-6 minutes until fragrant. Add the cooked onions and garlic, cashews, 1/2 cup sun-dried tomatoes (separated from the oil, if a bit gets in there that’s okay), water, nutritional yeast, salt and pepper to a blender and blend until smooth
Combine gnocchi with sauce, top off with fresh herbs, sun dried tomatoes and chili pepper flakes
