Pumpkin Curry
Ingredients
- 2 cans chickpeas, rinsed and drained
- 1/2 onion, diced
- 1/2 can pumpkin purée
- 2 tsp garlic powder
- 1/2 inch ginger root, minced
- 2 bay leaves
- 2 tsp dried basil
- 2 tsp cumin
- 1 tbsp curry powder
- 4 cups water or vegetable broth
- 1 tbsp maple syrup
- 1/4 cup peanut butter
- Salt and pepper to taste ❤️
Preparation
Sauté onions and ginger in a large sauce pan or pot until onion becomes translucent
Add remaining herbs and spices and stir frequently until aromatic
Add chickpeas, peanut butter, pumpkin, maple syrup, and liquid to pot and mix together well before bringing mixture to a boil
Reduce heat to a simmer and cook for about 20 minutes or until thickened
Serve with rice or potatoes and don't forget the greens
