Roasted Vegetables with Garlic Tahini Sauce

Ingredients

Vegetables

  • 1 large zucchini, chopped
  • 3 cups mushrooms, whole
  • 1 large red onion
  • 1 large white onion
  • 3 cups broccoli florets
  • 1/4 cup olive oil
  • 3 tbsp maple syrup
  • 1 tbsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp salt

Sauce

  • 1/2 cup tahini
  • 3 tbsp apple cider vinegar
  • 2 tbsp soy sauce
  • 1/2 cup plant milk
  • 2 cloves garlic

Preparation

  1. Preheat the oven to 350 degrees and line a baking tray with parchment paper.

  2. Add the zucchini, mushrooms, onion and broccoli to a large mixing bowl and stir together with the olive oil, maple syrup, dried thyme, garlic powder and salt.

  3. Transfer to the baking tray and bake for 25-30 minutes, until crispy.

  4. Meanwhile, make the sauce by simply stirring together all the ingredients.

  5. Serve the sauce with the veggies and enjoy.
