Roasted Vegetables with Garlic Tahini Sauce
Ingredients
Vegetables
- 1 large zucchini, chopped
- 3 cups mushrooms, whole
- 1 large red onion
- 1 large white onion
- 3 cups broccoli florets
- 1/4 cup olive oil
- 3 tbsp maple syrup
- 1 tbsp dried thyme
- 1 tsp garlic powder
- 1 tsp salt
Sauce
- 1/2 cup tahini
- 3 tbsp apple cider vinegar
- 2 tbsp soy sauce
- 1/2 cup plant milk
- 2 cloves garlic
Preparation
Preheat the oven to 350 degrees and line a baking tray with parchment paper.
Add the zucchini, mushrooms, onion and broccoli to a large mixing bowl and stir together with the olive oil, maple syrup, dried thyme, garlic powder and salt.
Transfer to the baking tray and bake for 25-30 minutes, until crispy.
Meanwhile, make the sauce by simply stirring together all the ingredients.
Serve the sauce with the veggies and enjoy.
