Maple Dijon Roasted Vegetables

Ingredients

Maple dijon sauce

  • 1 tbsp maple syrup
  • 2 tbsp dijon mustard
  • 1/4 tsp garlic powder
  • 1/8 tsp paprika
  • Dash ground sage
  • Dash ground thyme

Vegetables

  • 2 to 3 large carrots
  • 2 medium zucchini
  • 1/4 large red onion
  • 1 to 2 tbsp olive or avocado oil
  • Chopped fresh parsley for serving (optional)

Preparation

  1. Preheat the oven to 400 degrees F and line baking tray or trays with parchment paper.

  2. Peel and chop carrots into bite-sized pieces, place them on a tray, drizzle with half the oil, toss, and sprinkle generously with salt and pepper, then place in the oven.

  3. Cut zucchini lengthwise and then crosswise into thick pieces, slice the red onion, place them on a tray, sprinkle with the remaining oil, salt, and pepper, and put in the oven.

  4. Bake for an additional 20 to 30 minutes, flipping halfway through.

  5. Meanwhile, stir together the maple dijon sauce ingredients in a small bowl.

  6. Once the vegetables are done roasting, drizzle with the sauce and serve.

Tips

  1. Carrots typically need more time than zucchini and onion, but this depends on the size of the pieces.

  2. If using thin slices of onion, remove them early to prevent burning.

  3. The recipe can be easily doubled or tripled for larger groups.
