Maple Dijon Chicken Sheet Pan Dinner

Ingredients

  • 1 lb Brussel sprouts
  • 2 medium sweet potatoes
  • 1 red onion
  • 3 tbsp olive oil
  • 2 chicken breasts
  • 2 tbsp maple syrup
  • 2 tbsp Dijon mustard

Preparation

  1. Preheat oven to 400F.

  2. In a bowl, add chicken and coat with dijon mustard maple syrup.

  3. Dice the onion, cube the sweet potatoes, and slice the Brussels sprouts. Add each to a bowl and coat with 1 tbsp olive oil (I just reused the same bowl).

  4. Add the veggies to a large baking sheet.

  5. Bake the veggies for 10 minutes.

  6. Then add the chicken to the sheet pan and drizzle with a little olive oil.

  7. Bake everything for an additional 20 minutes or until the chicken reaches 165F internal temp.

Tips

  1. This recipe makes 4 meals and can be stored in the fridge for up to 4 days.
