Maple Dijon Chicken Sheet Pan Dinner
Ingredients
- 1 lb Brussel sprouts
- 2 medium sweet potatoes
- 1 red onion
- 3 tbsp olive oil
- 2 chicken breasts
- 2 tbsp maple syrup
- 2 tbsp Dijon mustard
Preparation
Preheat oven to 400F.
In a bowl, add chicken and coat with dijon mustard maple syrup.
Dice the onion, cube the sweet potatoes, and slice the Brussels sprouts. Add each to a bowl and coat with 1 tbsp olive oil (I just reused the same bowl).
Add the veggies to a large baking sheet.
Bake the veggies for 10 minutes.
Then add the chicken to the sheet pan and drizzle with a little olive oil.
Bake everything for an additional 20 minutes or until the chicken reaches 165F internal temp.
Tips
This recipe makes 4 meals and can be stored in the fridge for up to 4 days.
