Banana Bread Pancakes with Chocolate & Strawberries

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg/1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder
  • strawberries and some dark chocolate blocks

Preparation

  1. First you'll have to prepare the pancake batter

  2. Mash the banana with a fork, beat the egg and mix all of the ingredients except for the garnishes

  3. Heat a non-stick pan and using a spoon pour the batter to form little pancakes (you can add tiny amount of coconut oil if you want to fry them)

  4. Bake each side for 1 minute until they turn golden-brown

  5. After making the stack of pancakes, slice in half and add the strawberries

  6. For the chocolate drizzle - just break the chocolate into little pieces and melt it in the microwave

  7. Make sure to heat it in intervals and stir in between, so that it doesn't burn! you can also add a little bit of milk or coconut oil to it, so that it becomes more silky

  8. Then drizzle over the pancakes
