Banana Bread Pancakes with Chocolate and Strawberries
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
Garnishes
- strawberries
- some dark chocolate blocks
Preparation
Mash the banana with a fork.
Beat the egg.
Mix all ingredients except the garnishes to prepare the pancake batter.
Heat a non-stick pan.
Optionally, add a small amount of coconut oil to the pan.
Pour the batter using a spoon to form small pancakes.
Cook each side for 1 minute until golden-brown.
Stack the pancakes.
Slice the pancakes in half and add the strawberries.
Chocolate drizzle
Break the chocolate into small pieces.
Melt the chocolate in the microwave, heating in intervals and stirring in between to avoid burning.
Optionally, add a little milk or coconut oil to make it silky.
Drizzle the melted chocolate over the pancakes.
