Cinnamon Raisin French Toast

Ingredients

  • 1 cup canned coconut milk
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 TSP vanilla extract
  • 1 TB ground flax
  • 4 slices @happycampersgf cinnamon raisin bread

Toppings

  • @earthbalance soy free butter
  • Powdered sugar
  • Organic maple syrup

Preparation

  1. To make dipping batter, combine all ingredients in a bowl and let sit for 5-10 minutes.

  2. Heat butter in frying pan until melted

  3. Dip each piece of bread on the batter (do not over saturate)

  4. Cook in pan for approximately 5 minutes per side on medium low heat until nice and crispy.

  5. Assemble with butter, syrup, berries and powdered sugar!
