Creamy Broccoli Pasta Dish

Ingredients

  • 1 box pasta shells
  • 1 large head of broccoli
  • 3 garlic cloves
  • 1/4 cup vegetable broth or 4 tbsp avocado oil or olive oil
  • 1/2 tsp red chili flakes
  • 1/4 to 1/2 cup vegan Parmesan

Preparation

  1. Cook pasta according to directions, reserving 1/2 cup of pasta water.

  2. Heat skillet to medium. Add veggie broth or oil along with garlic and red chili flakes. Cook for a couple minutes, taking care not to burn. Add more broth if using and needed.

  3. Add broccoli, stirring and breaking down into small pieces and combine well with garlic and chili flakes. This will take a few minutes.

  4. Add pasta to skillet and toss well to coat.

  5. Add the Parmesan and the reserved pasta water bit by bit until a sauce has formed and pasta is well-coated. Enjoy!
