Delicious Vegan French Toast

Ingredients

  • 1 loaf thick cut bread, about 12 slices (i used whatever bread i had on hand and followed the recipe notes to toast in the oven at 200 degrees for 20 minutes afterward)
  • 2/3 to 3/4 cup aquafaba (whatever you get out of 1 can of chickpeas)
  • 1/2 cup nondairy milk (i used oat)
  • 1 tbsp nutritional yeast
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • pinch nutmeg—optional (i used allspice)
  • pinch turmeric (for color)
  • oil, for pan

Preparation

  1. Strain 1 can of chickpeas, separating the beans from the aquafaba liquid

  2. Store chickpeas for later (i’ll be making chickpea tuna salad for lunch??)

  3. In a medium sized bowl, whisk aquafaba until good and frothy, about 20 seconds

  4. Add nondairy milk, nutritional yeast, cinnamon, vanilla, nutmeg, and turmeric to aquafaba, mix together

  5. Heat a nonstick skillet to medium heat, lightly oil

  6. Dip bread slices one at a time into mixture, coating both sides fully

  7. Once coated, place in preheated pan

  8. Cook for about 3-4 minutes per side, until golden brown

  9. Serve immediately! best with powdered sugar, maple syrup, and a side of fruit

  10. Recipe notes:

  11. Keep your french toast toasty while you finish cooking by popping the finished toast into the oven at 200° on a baking sheet

  12. Re-oiling pan between batches is recommended to prevent sticking

  13. Nonstick pan is recommended for the same reason

  14. I hope you guys enjoy this

  15. It was my first time making vegan french toast and the only thing i think i would do differently, is make more

  16. And just a splash of maple syrup in the liquid mix before dipping the bread

  17. Feel free to switch up the fruit, and add more cinnamon and allspice for those warm baking flavors
