Vegan French Toast with Aquafaba
Ingredients
- 1 loaf thick cut bread, about 12 slices
- 2/3 to 3/4 cup aquafaba
- 1/2 cup nondairy milk
- 1 tbsp nutritional yeast
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- pinch nutmeg (optional)
- pinch turmeric
- oil, for pan
Preparation
Strain 1 can of chickpeas, separating the beans from the aquafaba liquid. Store chickpeas for later.
In a medium sized bowl, whisk aquafaba until good and frothy, about 20 seconds.
Add nondairy milk, nutritional yeast, cinnamon, vanilla, nutmeg, and turmeric to aquafaba, mix together.
Heat a nonstick skillet to medium heat, lightly oil.
Dip bread slices one at a time into mixture, coating both sides fully.
Once coated, place in preheated pan. Cook for about 3-4 minutes per side, until golden brown.
Serve immediately! Best with powdered sugar, maple syrup, and a side of fruit.
