Grilled Vegan Cuban Sandwich with Jackfruit

Ingredients

  • GF almond and rice bread
  • soy free butter
  • Cheddar slices
  • jackfruit
  • pickle slices
  • organic yellow mustard

Seasonings

  • smoked paprika
  • liquid smoke
  • garlic powder
  • onion powder
  • Himalayan salt
  • pepper
  • chili powder

Preparation

  1. Drain the can of jackfruit and pull apart to shred, discarding any hard parts.

  2. Melt 1/2 tablespoon of butter in a pan and saute the jackfruit with seasonings, using 1/2-1 teaspoon of each seasoning except liquid smoke, which is 1/4 teaspoon.

  3. Saute the jackfruit until the seasonings are fully incorporated, about 5-10 minutes.

  4. Use a grill pan or panini press to grill the bread and melt the cheese.

  5. Assemble the sandwich by spreading mustard on each side and adding pickles.
