Healthy Vegan Protein Pancakes

Ingredients

  • 100g or 1 1/4 cup fine oats
  • 120g or 1 medium ripe banana
  • 180ml or 3/4 cup soy milk or any plant milk
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 scoop protein powder

Preparation

  1. Mash the banana with a fork in a large bowl

  2. Blend the oats to form oat flour

  3. Mix the flour, milk, baking powder, cinnamon and protein powder in the bowl with the mashed banana, whisk to combine

  4. Heat up a large non-stick pan over medium to low heat

  5. Pour one or two pancakes at a time, let cook for 1-2 minutes until bubbles appear, then flip over and cook for an additional 30 seconds

  6. Stack them on a plate and enjoy with some nut butter and fresh berries
