Herbed Chicken and Rice

Ingredients

  • 1 Package of @allvegetarianinc Vegan Chicken Drumsticks
  • 3 cups of Cooked Brown Rice (I used a mix of @lundbergfarms Brown Jasmine and Wild Rice)
  • 2 1/2 cups frozen Broccoli roughly chopped
  • 1/2 cup Red Onion chopped
  • 5 Garlic Cloves
  • 2 Tbsp of Parsley chopped
  • 1 Tbsp of Thyme chopped
  • 2 tsp of Rosemary chopped
  • 2 tsp of Poultry Seasoning
  • 2 Tbsp of Vegan Butter
  • 1 1/2 Tbsp of Flour
  • 1 1/2 cup Vegetable Broth
  • Salt & Pepper to taste

Preparation

  1. Cook the rice according to package directions with vegetable broth and 3 whole cloves of garlic. Set aside.

  2. In a large skillet, sauté the onion in the butter on medium-low heat until they start to take on some color.

  3. Add in the chopped herbs and 2 cloves of minced garlic and continue to sauté for a few minutes. Add the chicken to the pan and brown on all sides.

  4. Remove the chicken and set aside. In the same skillet, add the flour to the onions and herbs and mix until well coated. Continue to cook for a few minutes, stirring occasionally.

  5. Add in the vegetable broth and turn up the heat to medium. Stir occasionally as the gravy thickens. Add in the chopped broccoli and rice. Mix well.

  6. Add the rice mixture to a baking dish and top with the cooked chicken. Cover with foil and bake at 350 for 35 minutes.
