One Bowl Deep Dish Protein Pancake

Ingredients

  • 30g vanilla pea protein powder or almond meal
  • 1 tsp natural sweetener
  • 20g oat flour
  • 60ml vegan egg replacer or egg whites
  • 30-50ml almond milk/milk of choice
  • 1tsp baking powder
  • optional inclusions: berries, choc chips, raisins

Preparation

  1. To a large mixing bowl, add pea protein, flour and baking powder. Stir to combine dry ingredients

  2. Pour in the almond milk and egg whites and continue stirring until dry and wet ingredients are combined into a batter

  3. Fold through any optional inclusions

  4. Heat a small non-stick, or lightly greased, pan on medium-low heat. Pour the batter onto the pan, and allow the pancake to cook completely, before using a spatula to flip the pancake over to cook the other side

  5. Serve immediately, or allow to cool before storing in an airtight container for up to 7 days
