Scrumptious Tofu and Leek in Spicy Black Bean Sauce
Ingredients
- 1 pack firm tofu
- 1 leek
- 1 tablespoon spicy black bean sauce
- 2 teaspoons soy sauce
- 1 teaspoon minced garlic
- 1/4 cup bell pepper
- handful of scallions
- 1/4 cup water or stock
- pinch of sugar (optional)
- oil
- sesame oil
Preparation
Drain the tofu well, pat dry, and cut into thin rectangles or triangles.
In a heated non-stick pan with 2 tablespoons oil, pan fry the tofu until golden brown on all sides, flipping a few times. Drain on a paper towel to absorb excess oil and set aside.
Using the same pan, add a little oil if needed, and sauté the garlic, leek, and bell pepper until fragrant.
Add in all sauces, stock, and the tofu along with a pinch of sugar, if using.
Cover with a lid and let simmer for 1 minute.
Drizzle with sesame oil before serving with your favorite grain.
