Scrumptious Tofu and Leek in Spicy Black Bean Sauce

Ingredients

  • 1 pack firm tofu
  • 1 leek
  • 1 tablespoon spicy black bean sauce
  • 2 teaspoons soy sauce
  • 1 teaspoon minced garlic
  • 1/4 cup bell pepper
  • handful of scallions
  • 1/4 cup water or stock
  • pinch of sugar (optional)
  • oil
  • sesame oil

Preparation

  1. Drain the tofu well, pat dry, and cut into thin rectangles or triangles.

  2. In a heated non-stick pan with 2 tablespoons oil, pan fry the tofu until golden brown on all sides, flipping a few times. Drain on a paper towel to absorb excess oil and set aside.

  3. Using the same pan, add a little oil if needed, and sauté the garlic, leek, and bell pepper until fragrant.

  4. Add in all sauces, stock, and the tofu along with a pinch of sugar, if using.

  5. Cover with a lid and let simmer for 1 minute.

  6. Drizzle with sesame oil before serving with your favorite grain.
