Spinach Fried Rice with Pine Nuts, Anyone

Ingredients

  • ~ 2 cups of cooked Jasmine rice
  • ~ 2 cups fresh spinach (more for a greener rice)⁣
  • ~ 1/2 cup fresh corn kernel⁣
  • ~ 1/4 cup lightly toasted pine nuts⁣
  • ~ 1 teaspoon soy sauce/coconut amino/tamari⁣
  • ~ salt to taste, sesame seeds, white pepper⁣
  • ~ oil, toasted sesame oil, chili for garnish⁣

Preparation

  1. Yields 2-3 servings)⁣

  2. Blend spinach with a little water until you get a fine paste (enough water to keep the blender going, I used hand blender)

  3. Pour spinach mixture in a heated non-stick pan (water will start to separate from the paste). Stir continuously until most water has evaporated

  4. Push to the side of the pan. Drizzle 1 teaspoon of oil, and sauté corn kernel and rice. Then, continue to cook while mixing the rice with spinach mixture until well combined

  5. Season with soy sauce, dash of white pepper and salt. Finally, mix in pine nuts, garnish with sesame seeds and a drizzle of toasted sesame oil and chili, if using. Serve warm with your favorite protein. ⁣
