Sweet Potato Brussels Sprouts Egg Skillet

Ingredients

  • avocado oil
  • 5-6 Brussels sprouts
  • 1/2 sweet potato
  • 1 egg
  • avocado (for topping)

Preparation

  1. Heat avocado oil in a skillet over medium heat.

  2. Add Brussels sprouts and sweet potato to the skillet.

  3. Cook until soft, which takes about 10 minutes.

  4. Preheat the oven to 400F while cooking.

  5. After 10 minutes, add the egg to the skillet.

  6. Place the pan in the oven and bake for another 10 minutes.

  7. Monitor the egg to ensure the whites are fully cooked.

  8. Top with avocado before serving for added flavor.

  9. Note: Avocado oil is recommended for its higher smoke point to prevent sticking and burning.
