Vegan Pad Thai

Ingredients

  • 2 tbsp olive oil
  • for the sauce:
  • 1 1/2 tsp tamarind paste
  • 1/2 cup soy sauce
  • 4 cloves garlic
  • 1 tsp chilli sauce
  • 1 tbsp coconut sugar
  • 2 cloves garlic, minced
  • juice of 1 lime
  • water as needed
  • 1 packet rice noodles
  • 1 block firm tofu
  • 2 cloves garlic, minced
  • Half a bunch green onions, diced

Preparation

  1. In a small saucepan combine the ingredients for the sauce. Stir as it heats and add a little water (adjusting to taste) stir to thicken

  2. In a large pan heat the olive oil and add the tofu, cooking on all sides (for about 10 mins)

  3. Add the garlic and green onion and stir through. Next add the noodles (pre cooked if needed)

  4. Add the sauce to the pan and stir through until nicely coated. Serve warm with extra lime
