Zucchini Kofta Curry with Onion Tomato Gravy
Ingredients
Koftas
- 1 big zucchini
- gram flour
- salt
- chilli powder
- coriander powder
- chopped coriander leaves
- green chilli (optional)
- turmeric powder
Gravy
- tomatoes and onion in 2:1 ratio
- ginger
- few garlic pods
- green chilli
- oil
- salt
- turmeric powder
- coriander powder
- cinnamon powder
- cumin powder
- crushed black cardamom
- kastoori methi
- pomegranate powder
- water
Preparation
Preparing koftas
Peel and grate 1 big zucchini.
Mix with gram flour, salt, chilli powder, coriander powder, chopped coriander leaves, green chilli (optional), and turmeric powder to get a thick consistency.
Shape into kofta balls.
Cook in paniyaram pan or fry until crispy.
Preparing gravy
Grind tomatoes, onion in 2:1 ratio, ginger, garlic pods, and green chilli together to make a paste.
Heat oil in a wok and cook the paste until oil separates.
Add salt, turmeric powder, coriander powder, cinnamon powder, cumin powder, crushed black cardamom, kastoori methi, and pomegranate powder; adjust spices to taste.
Cook the paste for about 10 minutes until a mild fragrance develops.
Add water to adjust consistency and simmer for 15 minutes.
Add the koftas and garnish with fresh coriander leaves.
Serve hot with your choice of bread.
