Slow Cooker Cauliflower and Chickpea Curry

Ingredients

  • 1 onion, chopped
  • 1/2 cauliflower, chopped
  • 2 tins chickpeas
  • 1 tin chopped tomatoes
  • 1 tin coconut milk (scoop the coconut cream from the top and add in about half of the remaining water)
  • 2 tsp tikka curry powder
  • 1 tsp garam masala
  • 1 tsp pepper
  • 1 tsp turmeric
  • 2 bay leaves

Preparation

  1. Pop all the ingredients into the slow cooker and cook on low for a 8 hours
