Slow Cooker Cauliflower and Chickpea Curry

Ingredients

  • 1 onion, chopped
  • 1/2 cauliflower, chopped
  • 2 tins chickpeas
  • 1 tin chopped tomatoes
  • 1 tin coconut milk
  • 2 tsp tikka curry powder
  • 1 tsp garam masala
  • 1 tsp pepper
  • 1 tsp turmeric
  • 2 bay leaves

Preparation

  1. Chop the onion and cauliflower if not already done.

  2. For the coconut milk, scoop the coconut cream from the top and add in about half of the remaining water.

  3. Combine all ingredients in the slow cooker.

  4. Cook on low for 8 hours.
