Walnut & Chickpea Burgers

Ingredients

  • 1 cup chickpeas, soaked overnight large handful spinach ⠀
  • 1 cup walnuts (or any other nut) ⠀
  • 2 tbsp tamari sauce ⠀
  • 1 tbsp each turmeric, cumin & paprika 1 bunch fresh basil leaves ⠀
  • 1 tsp garlic-infused olive oil⠀

Preparation

  1. Chickpeas: strain, bring to boil, then discard the water

  2. Repeat to remove scum

  3. Reduce to simmer and cook until soft⠀

  4. Blend all ingredients together to form a sticky dough – add a little water if not binding

  5. Roll into balls, press into burgers on a lined tray

  6. Bake at 200 c until crispy (about 20min)

  7. Serve with zucchini linguine, pesto & lemon ⠀
