Walnut and Chickpea Burgers
Ingredients
- 1 cup chickpeas, soaked overnight
- Large handful spinach
- 1 cup walnuts (or any other nut)
- 2 tbsp tamari sauce
- 1 tbsp turmeric
- 1 tbsp cumin
- 1 tbsp paprika
- 1 bunch fresh basil leaves
- 1 tsp garlic-infused olive oil
Preparation
Strain the chickpeas, bring to boil, then discard the water. Repeat to remove scum. Reduce to simmer and cook until soft.
Blend all ingredients together to form a sticky dough, add a little water if not binding.
Roll into balls, press into burgers on a lined tray. Bake at 200°C until crispy, about 20 minutes.
Serve with zucchini linguine, pesto, and lemon.
