Walnut & Chickpea Burgers
Ingredients
- 1 cup chickpeas, soaked overnight large handful spinach ⠀
- 1 cup walnuts (or any other nut) ⠀
- 2 tbsp tamari sauce ⠀
- 1 tbsp each turmeric, cumin & paprika 1 bunch fresh basil leaves ⠀
- 1 tsp garlic-infused olive oil⠀
Preparation
Chickpeas: strain, bring to boil, then discard the water
Repeat to remove scum
Reduce to simmer and cook until soft⠀
Blend all ingredients together to form a sticky dough – add a little water if not binding
Roll into balls, press into burgers on a lined tray
Bake at 200 c until crispy (about 20min)
Serve with zucchini linguine, pesto & lemon ⠀
