Vegetable and Tofu Stir-Fry
Ingredients
- 250g tofu
- 1 onion, diced
- 4 garlic cloves, crushed and finely chopped
- 1/4 tsp cumin seeds
- 1/2 tsp chilli flakes
- 1 tsp minced ginger
- 2 zucchini, sliced
- 2 carrots, peeled and sliced
- 1 large capsicum, deseeded and sliced
- 4 slices of cabbage, finely chopped
- Tamari
- Vegetarian Oyster Sauce
- Salt and Pepper
Preparation
Chop tofu into slices, and fry in a dash of sesame oil until light golden in colour on both sides. Set aside.
In the same pan, fry the onion, garlic and cumin seeds until soft. Add carrot, zucchini and minced ginger. A splash of water here will help mix in the ginger.
Stir through the capsicum, cabbage and chilli flakes, and cook until cabbage has softened. Add the tofu back to the pan, and add a solid splash of each of the sauces. It's really up to you how much! Season, stir, simmer briefly and serve.
