Basic Stirfry Veg + Tofu

Ingredients

  • 250g tofu
  • 1 onion, diced
  • 4 garlic cloves, crushed + finely chopped
  • 1/4 tsp cumin seeds
  • 1/2 tsp chilli flakes
  • 1 tsp minced ginger
  • 2 zucchini, sliced
  • 2 carrots, peeled + sliced
  • 1 large capsicum, deseeded + sliced
  • 4 slices of cabbage, finely chopped
  • tamari (@pureharvest)
  • vegetarian oyster sauce (i get mine from @thegreenedge
  • salt + pepper

Preparation

  1. Chop tofu into slices, and fry in a dash of sesame oil until light golden in colour on both sides. Set aside

  2. In the same pan, fry the onion, garlic + cumin seeds until soft. Add carrot, zucchini + minced ginger. A splash of water here will help mix in thr ginger

  3. Stir through the capsicum, cabbage + chilli flakes, and cook until cabbage has softened. Add the tofu back to the pan, and add a solid splash of each of the sauces. It's really up to you how much! Season, stir, simmer briefly + serve
