Garlic Lime Stir Fry
Ingredients
- red bell pepper
- carrot
- tenderstem broccoli
- sugar snap peas
- baby corn
- noodles
- strips of vegan burger
Sauce
- 1/4 cup tamari or soy sauce
- 1/4 cup brown sugar
- 5 tablespoons lime juice
- 1/2 cup water
- 3 cloves garlic, minced
- 1 tablespoon grated ginger root
- 1 tablespoon sesame oil
- cornflour slurry (2 tablespoons cornflour mixed with 2 tablespoons cold water)
Garnishes
- fresh lime
- coriander
- basil
- roasted sesame seeds
Preparation
Mix all the sauce ingredients together, including the cornflour slurry.
Heat oil in a pan and cook the protein, such as vegan burger strips, until browned.
Add the vegetables and noodles to the pan and stir-fry until slightly softened.
Pour in the sauce, increase heat to boil and thicken, then reduce heat and stir until everything is well coated.
Garnish with fresh lime, coriander, basil, and roasted sesame seeds before serving.
Tips
Feel free to substitute the protein with tofu, tempeh, vegan chicken, or use only vegetables and noodles.
