Vegan Thai Noodle Stir-Fry

Ingredients

Sauce

  • 1 massive dollop peanut butter
  • 3 tablespoons tamari
  • 1 teaspoon gochujang (homemade)
  • 1 teaspoon kimchi sriracha
  • 1 tablespoon sesame oil
  • Juice of 1/2 lime
  • 1 clove garlic

Noodle components

  • 1 shaved carrot
  • 1 green onion
  • 2 cloves garlic
  • Handful of spinach
  • 1/2 block roasted tofu
  • 1/2 red pepper
  • Handful of chopped cilantro
  • Additional lime juice
  • Noodles (quantity not specified)

Preparation

  1. Mix all sauce ingredients together in a bowl and set aside.

  2. Cook noodles according to package instructions and drain.

  3. In a skillet or pan, sauté the vegetables and roasted tofu until tender.

  4. Combine the cooked noodles, sautéed ingredients, and sauce, then heat through and serve.
