Vegan Thai Noodle Stir-Fry
Ingredients
Sauce
- 1 massive dollop peanut butter
- 3 tablespoons tamari
- 1 teaspoon gochujang (homemade)
- 1 teaspoon kimchi sriracha
- 1 tablespoon sesame oil
- Juice of 1/2 lime
- 1 clove garlic
Noodle components
- 1 shaved carrot
- 1 green onion
- 2 cloves garlic
- Handful of spinach
- 1/2 block roasted tofu
- 1/2 red pepper
- Handful of chopped cilantro
- Additional lime juice
- Noodles (quantity not specified)
Preparation
Mix all sauce ingredients together in a bowl and set aside.
Cook noodles according to package instructions and drain.
In a skillet or pan, sauté the vegetables and roasted tofu until tender.
Combine the cooked noodles, sautéed ingredients, and sauce, then heat through and serve.
