Super Fat Slurpy Spicy Noodle Bowl
Ingredients
- 1 block of frozen udon noodles
- 1 red chili pepper
- 2 tbsp peanut butter
- 1 tbsp minced ginger
- 2 cloves garlic minced
- 1/2 tsp agave
- 1 tsp rice wine vinegar
- 2 tbsp Tamari
- 2 tbsp sesame oil
- Water to thin
- Broccoli
- Baby corn
- Green onion
- White and black sesame seeds
Preparation
Heat the sesame oil in a shallow pan.
Sauté the chili, ginger, and garlic in the oil for 30-45 seconds until fragrant.
Add the peanut butter, Tamari, agave, and rice wine vinegar, and stir to combine.
Prepare the udon noodles according to the package instructions.
During the last minute of cooking, add the broccoli and baby corn to the pot with the noodles.
Drain the noodles and vegetables, reserving about 1 cup of the cooking water.
Gradually add the reserved water to the sauce to thin it.
Top with green onion and sesame seeds.
