Vegan Walnut Tofu Dan Dan Noodles
Ingredients
Sauce
- 3 tablespoons tamari
- 1 tablespoon peanut butter
- 1 minced clove garlic
- 2 teaspoons sriracha
- 1 teaspoon sesame oil
- 1 tablespoon maple syrup
Noodle and vegetables
- Flat rice noodles
- 1/2 onion
- 1 clove garlic
- Pinch of chillies
- Bok choy
- 8 cremini mushrooms
- 1 cup walnut tofu meat
- Handful of cilantro
- 1 green onion
- Handful of peanuts
- 2 tablespoons chili miso sauce
Preparation
Prepare the sauce by mixing all sauce ingredients and set aside.
Sauté the onion, garlic, chillies, mushrooms, and bok choy in a skillet until softened.
Add the walnut tofu meat to the skillet and cook until heated through.
Cook the flat rice noodles in boiling water for 6 minutes or until tender.
Assemble the bowls by combining the noodles, cooked vegetables and tofu, and pour over the sauce.
Garnish with cilantro, green onion, peanuts, and chili miso sauce.
