Spicy Udon Noodle Bowl
Ingredients
- 1 block of frozen udon noodles
- 1 red chili pepper
- 2 tbsp peanut butter
- 1 tbsp minced ginger
- 2 cloves garlic minced
- 1/2 tsp agave
- 1 tsp rice wine vinegar
- 2 tbsp Tamari
- 2 tbsp sesame oil
- Water to thin
- Broccoli
- Baby corn
- Green onion
- White and black sesame seeds
Preparation
Heat the sesame oil in a shallow pan and sauté the chili, ginger, and garlic for 30-45 seconds until fragrant.
Add the peanut butter and Tamari to the pan and stir.
Prepare the udon noodles according to the package instructions.
During the last minute of cooking the noodles, add the broccoli and baby corn to the pot.
Drain the noodles and vegetables, and reserve about 1 cup of the cooking water.
Gradually add the reserved water to the sauce to thin it.
Mix the sauce with the drained noodles and vegetables.
Top with green onions and sesame seeds.
