Vegan Teriyaki Beef Udon Stir Fry
Ingredients
- 2 bricks of frozen udon noodles (approx 500g)
- 1 tbsp vegetable oil
- 1 cup vegan beef strips
- 1 cup snow peas, sliced & trimmed
- 1 cup oyster mushrooms, sliced
- 1 carrot thinly sliced
- 1 tsp minced garlic
Sauce
- 3 tbsp tamari or soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 tsp dark soy sauce
- 1 tsp grated ginger
- 1/3 cup water
Preparation
Mix the sauce ingredients together.
Thaw udon noodles by microwaving for 1-2 minutes or until just thawed, then set aside.
Heat a large nonstick pan over medium-high heat.
Add olive oil and vegan beef strips, cook for 3-4 minutes, then set aside on a clean plate.
Add carrots, mushrooms, snow peas, and garlic; cook for 5 minutes or until crisp-tender.
Add back the vegan beef strips, thawed udon noodles, and the prepared sauce.
Stir and mix until the sauce evenly coats the veggies and noodles.
Once everything is hot, transfer to serving plates and garnish with cilantro and sesame seeds.
Tips
You can add any vegetables you like to this stir fry.
