Easy Udon Noodle Stir Fry
Ingredients
- 1 (250g) brick of udon noodles (frozen)
- 1 tbsp vegetable oil
- 1/2 cup vegan ground beef crumbles like Gardein
- 2 cups shredded cabbage
- half red pepper sliced
- 1 carrot thinly sliced
- 1 tsp minced garlic
- 1/2 tsp minced ginger
Sauce
- 1 1/2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1/2 tbsp mirin
- 1/2 tbsp brown sugar
- 1/2 tbsp sesame oil
- 2 tbsp water
Preparation
To thaw udon noodles, microwave for 1-2 minutes or until just thawed, and set aside.
Mix the sauce ingredients in a small bowl and set aside.
Heat a large nonstick pan over medium-high heat.
Add the carrots, red pepper, cabbage, garlic, and ginger and cook for 5 minutes or until crisp-tender.
Add the vegan ground beef and cook until heated through.
Add the thawed udon noodles and sauce and stir and mix until the sauce evenly coats the veggies and noodles.
Once everything is hot, transfer to serving plates and garnish with cilantro and sesame seeds.
Serve with fluffy white rice.
Notes
This recipe is perfect for using up vegetables in your fridge.
If udon noodles are unavailable, use your favorite noodle instead.
Yield is 1-2 servings.
