Super Fat Slurpy Spicy Noodle Bowl
Ingredients
- 1 block of frozen udon noodles
- 1 red chili pepper
- 2 tbsp peanut butter
- 1 tbsp minced ginger
- 2 cloves garlic minced
- 1/2 tsp agave
- 1 tsp rice wine vinegar
- 2 tbsp Tamari
- 2 tbsp sesame oil
- Water to thin
- Broccoli
- Baby corn
- Green onion
- White and black sesame seeds
Preparation
Prepare the sauce first by heating the sesame oil in a shallow pan and sauté the chili, ginger, and garlic in oil for about 30-45 seconds until fragrant, then add the peanut butter and Tamari and stir.
Prepare the udon noodles according to the package instructions.
During the last minute of the cook time, add the broccoli and corn to the pot with the udon noodles.
Drain the noodles and veggies and reserve about 1 cup of the cooking water.
Gradually add the water to the sauce to thin it.
Top with green onions and sesame seeds.
