Stir Fry Noodles with Tofu and Broccoli
Ingredients
Sauce
- 1 tbsp mirin
- 1 tbsp agave or maple syrup
- Juice of half lime
- 3 to 4 tsp sambal
- 1 tbsp sesame oil
- 2 tbsp tamari
- 1/2 tbsp dark soy sauce
- 1/4 tsp ginger powder
- 1/4 tsp garlic powder
Main
- 2 cups cooked udon noodles
- 1/2 tbsp sesame oil
- 2/3 block organic extra firm tofu, pressed to remove excess moisture and crumbled
- 1 tbsp dark soy sauce
- 2 cloves garlic, grated
- 1 cup broccoli florets, cut small and steamed until just crisp-tender
- Extra sambal to serve
Preparation
Whisk together the sauce ingredients in a bowl.
In a large pan over medium heat, add 1/2 tablespoon of sesame oil.
Add the crumbled tofu.
Cook, stirring occasionally, for 8 minutes.
Add 1 tablespoon dark soy sauce and grated garlic, then cook for another 3 minutes, stirring often.
Add the cooked noodles and sauce, and cook for another 2 minutes.
Add the broccoli and cook for 1 minute.
Serve with extra sambal if you like spice.
