Rice Noodles with Thai-Inspired Peanut Sauce
Ingredients
- 1 massive dollop peanut butter
- 3 tbsp tamari
- 1 tsp gochujang (homemade)
- 1 tsp kimchi sriracha
- 1 tbsp sesame oil
- 1/2 lime squeezed
- 1 clove garlic
- Rice noodles
- 1 shaved carrot
- 1 green onion
- 2 cloves garlic
- Handful spinach
- 1/2 block roasted tofu
- 1/2 red pepper
- Handful chopped cilantro
- More lime juice
Preparation
Mix all sauce ingredients together in a bowl.
Cook rice noodles according to package directions.
In a skillet, sauté garlic until fragrant.
Add carrot, green onion, red pepper, and spinach; cook until slightly softened.
Add roasted tofu and cooked noodles to the skillet.
Pour the sauce over the mixture and stir to combine.
Add lime juice and cilantro, and heat through.
Serve immediately.
