Quick and Easy Rice and Vegetable Stir-Fry

Ingredients

  • Leftover rice
  • Leftover vegetables (e.g., broccoli)
  • 1 tablespoon coconut oil
  • Spring onions
  • Handful of toasted cashews
  • Garnish: Coriander, sesame seeds, lime
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon sriracha

Preparation

  1. Melt a tablespoon of coconut oil in a pan and cook spring onions for a couple of minutes.

  2. Add the leftover cooked rice and vegetables (e.g., broccoli) to the pan and mix through.

  3. In a separate bowl, combine the sauce ingredients: honey, soy sauce, toasted sesame oil, and sriracha.

  4. Pour the sauce over the rice and vegetable mixture in the pan and mix well.

  5. Add a handful of toasted cashews to the stir-fry.

  6. Garnish the dish with coriander, sesame seeds, and lime.

  7. Serve and enjoy!
