Quick and Easy Rice and Vegetable Stir-Fry
Ingredients
- Leftover rice
- Leftover vegetables (e.g., broccoli)
- 1 tablespoon coconut oil
- Spring onions
- Handful of toasted cashews
- Garnish: Coriander, sesame seeds, lime
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon sriracha
Preparation
Melt a tablespoon of coconut oil in a pan and cook spring onions for a couple of minutes.
Add the leftover cooked rice and vegetables (e.g., broccoli) to the pan and mix through.
In a separate bowl, combine the sauce ingredients: honey, soy sauce, toasted sesame oil, and sriracha.
Pour the sauce over the rice and vegetable mixture in the pan and mix well.
Add a handful of toasted cashews to the stir-fry.
Garnish the dish with coriander, sesame seeds, and lime.
Serve and enjoy!
